Winemaker Notes
Our job in the cellar is find the fulcrum of extraction to celebrate these magnificent qualities and avoid pushing too far, which can lead to a wine that is unapproachable and hard. Once fermentation is complete the wine is lightly pressed to barrel where it will age for 21 months in 73% new French oak.
Vineyard Notes
The 2020 Old Vines Cabernet Sauvignon honors two of the oldest and most well-respected vineyards in the state. Cabernet Sauvignon planted in 1994 at Ciel du Cheval on Red Mountain provides mouth-filling flavors of complex, sweet fruit, and spice. Cabernet Sauvignon from Red Willow planted in 1991 contributes intense spice and floral aromatics and brings substantial weight and volume to the palate. The old, gnarled vines from these blocks are more self-regulating in the vineyard, offering lighter crops, smaller berries and extremely concentrated aromatics and flavors.
