Tasting Notes
95% Cabernet Sauvignon,
5% Merlot. The aromatics reveal sage and dried herbal notes
along with fresh red cherry and a hint of citrus peel.
On the palate, flavors of anise, currant, and dried
herbs emerge. Chewy tannins on the finish lend
structure and indicate this wine will continue to
evolve with cellaring. Well balanced yet youthful,
the 2021 Old Vines is an enjoyable wine that shows
both fruit and savory complexity.

Winemaker Notes
The 2021 Old Vines cabernet sauvignon honors two
of the oldest and most well-respected vineyards in
the state, with the addition of some of our oldest
vines at Quintessence vineyard. Cabernet
sauvignon planted in 1998 at Ciel du Cheval on Red
Mountain provides mouth-filling flavors of complex,
sweet fruit, and spice. Cabernet sauvignon from
Red Willow planted in 1991 contributes intense
spice and floral aromatics and brings substantial
weight and volume to the palate. The old, gnarled
vines from these blocks are more self-regulating in
the vineyard, oering lighter crops, smaller berries
and extremely concentrated aromatics and flavors.
The fruit from Quintessence adds depth and
dimension to the finished wine. Our job in the cellar
is to find the fulcrum of extraction to celebrate
these magnificent qualities and avoid pushing too
far which can lead to a wine that is unapproachable
and hard. Once fermentation was complete the
wine was lightly pressed to barrel where it aged for
21 months in 68% new French oak.
